Daniel Ap Geraint, head chef of the acclaimed Gunroom Restaurant at Plas Dinas Country House, is set to showcase his culinary skills on the prestigious 20th series of Great British Menu.
The popular television programme, which celebrates top British chefs, has made household names of many culinary icons over the past two decades, including Marcus Wareing, Tom Kerridge, and Simon Rogan. This year’s series will revolve around the theme of ‘Great Britons,’ and Ap Geraint is proud to represent Wales during the Welsh heats, which are set to air next week.
Located at the historic Plas Dinas Country House near Caernarfon, the Gunroom has become known for its innovative nine-course hybrid tasting menu that reflects local, seasonal produce. Under Ap Geraint’s leadership, the restaurant has earned widespread acclaim, including recognition in the Michelin Guide and several prestigious awards.
Having joined Plas Dinas in 2018, Ap Geraint has played a significant role in the establishment’s rise to prominence. His culinary philosophy centres around creating dishes that are full of flavour and grounded in his love for local ingredients. The restaurant was awarded two AA rosettes and the AA Wine List Award for Wales 2024/25, with Ap Geraint being recognised for his ability to offer a memorable and evolving dining experience.

Ap Geraint’s journey to becoming a top chef has been shaped by his deep-rooted love of food. Raised in Prestatyn, his grandmother (Nain) had a significant influence on his cooking style, with her wholesome and flavourful dishes inspiring him. Although he initially pursued a path in the creative industries, Ap Geraint discovered his true passion for cooking while working in a kitchen during a summer break from university.
His career began at an award-winning gastro pub near Llandudno, and by the age of 23, he became a head chef. Following a few successful years, Ap Geraint decided to open his own restaurant, which quickly gained recognition in the Michelin Guide and The Good Food Guide.
At The Gunroom, Ap Geraint’s dedication to refining and reimagining the menu has earned him and the restaurant a solid reputation for excellence. The restaurant’s approach to fine dining and its emphasis on local Welsh produce has made it a favourite for food lovers and critics alike.
